As uvas foram selecionadas através do tapete de escolha, antes de entrarem na prensa e foram levemente prensadas. A primeira fermentação alcoólica decorreu a temperatura de 13/14ºC em pequenas cubas de 500 lts. O engarrafamento para segunda fermentação foi feito segundo o método tradicional, com leveduras livres e manualmente, decorrendo em cave a temperatura constante de 17ºC. Foi feita battonage a cada garrafa 1 vez de 2 em e meses até ao degorgement. Tudo feito manualmente da vindima até a caixa.
