An ancestral flavour that takes us back to our origins.
Rabaçal cheese is handmade from a mixture of sheep's and goat's milk in a ratio of two parts sheep's milk to one part goat's milk.
The production of this cheese with its unmistakable flavour is limited to the geographical area of Serra do Sicó, which is also where the main ingredient, milk, originates.
Rabaçal cheese has a distinctive flavour and aroma, which is helped by the pastures of Erva de Santa Maria (tomilhinha), a characteristic of the Serra do Sicó.
