Origin
The area where CARM olive oils are produced is located in the heart of the Alto Douro, in the Douro Superior, the cradle of the best "A" vines for Port wine, where there have been Roman signs of this culture since the 2nd century BC, followed by the Arabs between the 7th and 11th centuries. It is in this area, more specifically around the village of Almendra where CARM has its olive groves, that one of the areas in Portugal with the most natural aptitude for excellent olive growing is located, thanks to the nature of the very poor schist soils, the exposure of the olive groves and the dry climate, characterised by notable temperature differences between summer and winter. The olive groves are located at altitudes of between 150 and 450 metres above sea level.

Agricultura Biológica em Denominação de Origem Protegida- DOP

A CARM foi uma das pioneiras da Olivicultura Biológica em Portugal, onde o controlo do inteiro ciclo de produção e o seu seguimento é controlado e certificado por uma entidade acreditada oficialmente – Sativa. Todas as quintas que dão origem à azeitona para a obtenção deste azeite encontram-se dentro da DOP para azeites de Trás-os- Montes e Alto Douro, onde a AOTAD superintende e controla toda a certificação dos azeites de acordo com as normas CEE por painel de provadores certificado.

Apanha e extração 

A apanha da azeitona é feita manualmente em olivais com inclinações acentuadas e por vibração mecânica nos restantes, sendo a colheita entre início de Novembro e meados de Dezembro. A extração é feita a frio em contínuo – moinho de pedras tradicional e / ou decanter ecológico de duas fases.
