Vinificação do Vinho Ribeiro Santo Grande Escolha Tinto as uvas foram totalmente desengaçadas para pequenos lagares inox, onde maceraram 24h a baixa temperatura, antes de iniciar a fermentação alcoólica, com leveduras selecionadas e a temperatura controlada. A fermentação alcoólica durou cerca de 15 dias, com pisa a pé para uma boa extração de cor e aromas. Após a fermentação, foi trasfegado para barricas novas de carvalho francês, onde permaneceu 14 meses até ao engarrafamento e após o engarrafamento permaneceu um mínimo de 6 meses em garrafa em cave fresca.
